ClockworkMod Recovery works with most of the Android smartphones, but not all. If your phone model does not appear in the list, you need to find an alternative recovery package. Else you can manually back up all your data as mentioned in the Pre-Requisites section

I noticed that after installing ginger on my Galaxy, two things began to happen.
Some character have been changed, like % to & and & to £ etc.

Also every once in a while, while using the screen, it turns off, but i can still use thw phone, if i press something on the screen the phone actually keeps working fine but the screen is turned off, wich is quite annoying, happens quite often and it only get fix if i press the power button two or three times and then unlock.

Any ideas what may be the cause of fix? thx guys.

This is the European version hence you are facing some character changes. There seems to be a prob with some drivers. Try to reset the phone i.e format the phone. Press T + Power button to enter into Recovery mode then reset the phone. If that doesnt work, reinstall the firmware again and it shld resolve the issue for sure..
